Apple Cinnamon Coffee Cake
Fiber One™ muffin mix struts its versatility when made into a delicious coffee cake with streusel and glaze.
Ingredients
Streusel
- 1/4cup packed brown sugar
- 1/4cup old-fashioned oats
- 2tablespoons chopped walnuts
- 1tablespoon butter
Coffee Cake
- 1box (15.3 oz) Betty Crocker™ Fiber One™ apple cinnamon muffin mix
- 3/4cup water
- 2tablespoons vegetable oil
- 2eggs
Glaze
- 1/4cup powdered sugar
- 1teaspoon water
Steps
1 Heat oven to 400°F. Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except butter. Cut in butter with fork until mixture is crumbly; set aside.
2 In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel.
3 Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
4 In small bowl, mix glaze ingredients until smooth; drizzle over coffee cake. Serve warm or cooled.
